Incredibly easy and fast creamy cheesecake between two layers of chocolate chip cookies.
Preheat oven to 325F.
Press one roll of cookie dough into the bottom of a greased 9×13″ glass pan. Place other roll in the freezer.
Combine softened cream cheese, eggs, vanilla and sugar. Beat with electric mixer until smooth.
Spread cream cheese mixture over cookie dough.
Slice roll of dough from freezer into approx. 1 inch slices.
Flatten slices with fingers and place on top of cream cheese mixture. Leave small spaces between slices to allow cheesecake to bubble through.
Bake at 325F for approximately 25 minutes or until cookie dough on top is golden brown.
Cool completely and chill in the fridge for at least 1 hour.
Cut into bite-sized squares and serve.
