These little seeds pack an amazing nutritional punch, and work well in creamier desserts because of their ability to soak up water and become slightly gel-like. In this recipe, the chia seeds act like a tapioca, or a rice, which makes the pudding that much more appetizing. This is an easy, fun dessert to whip together which capitalizes on the chia potential, while offering a delicious creamy mouth-pleasing treat!
1. Place the chia seeds in the milk, in a small bowl. Stir gently. Allow to sit in the fridge for about 20 minutes, stirring halfway to create a jelly-like mixture. Keep cool in the fridge.
2. Blend all of the remaining ingredients together in a blender until smooth. Fold in the chia mixture. Chill in the fridge, and serve. Enjoy!
