Description

Cheesecake on a stick! No bake! Happy 4th, y’all!

Ingredients

  • 5 ounces, weight Cream Cheese, Softened
  • ½ cups Powdered Sugar
  • ½ cups Milk
  • ¼ teaspoons Vanilla
  • ¼ teaspoons Fresh Lemon Juice
  • ¼ cups Dark Chocolate Chips, Melted
  • 2 whole Graham Crackers (crushed)

Preparation

1. In a medium bowl, beat together the cream cheese, powdered sugar, milk, vanilla and lemon juice.
2. Pour into your popsicle molds. Freeze overnight.
3. When ready to serve, unmold the popsicles, dip in melted chocolate then graham cracker crumbs. Serve immediately, or place them back in the freezer for the chocolate to harden.

I made these popsicles on a whim when I realized I had cream cheese needing to be used. I didn’t dip them in chocolate, but otherwise I followed the recipe exactly. So delicious! My 10 y.o. son said these are the best popsicles he’s ever had! Quite the compliment. I am making more tomorrow because they’re already gone.
