Ultra moist carrot cake and easy to make!
Cake mix:
Mix together the sugar, oil, vanilla, and eggs in a large bowl. In a separate bowl, sift together flour, salt, baking soda, and cinnamon. Add the dry ingredients to the egg mixture. Then add the carrots into the batter. Pour batter into a prepared bundt pan. (I grease the pan with solid Crisco and sprinkle it with powdered sugar instead of flour.)
Bake in a 350-degree oven for 45 to 50 minutes, or until a toothpick inserted into the cake comes out clean. Make the icing while the cake is in oven.
Cream cheese icing:
Mix together cream cheese, butter, powdered sugar, coconut and pecans. Let the cake cool completely, then ice and eat!
