Description

Carrot cake, meet blondie. Blondie, this is carrot cake.

Ingredients

  • 2 cups All-purpose Flour
  • 1 teaspoon Baking Powder
  • ¼ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1 Tablespoon Cinnamon
  • ¼ teaspoons Ginger
  • ⅛ teaspoons Nutmeg
  • ½ cups Melted Butter
  • 2 cups Brown Sugar
  • 1 Tablespoon Vanilla
  • 2 whole Eggs
  • 1-½ cup Shredded Carrot
  • 1 cup White Chocolate Chips (optional), Plus More For Drizzling Over The Top

Preparation

Preheat oven to 350ºF.

In a medium bowl, combine flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.

In a mixer, cream together butter, sugar, and vanilla. Stir in eggs until just combined.

Stir dry ingredients into wet until just combined. Fold in carrots and white chocolate chips.

Spread into a well-greased 9×13 pan and bake for 30 minutes until an inserted toothpick comes out clean. Cut into squares and serve with drizzled melted white chocolate or caramel sauce.

I bet a cream cheese/cinnamon type glaze would be really great on these. Excellent recipe.

I made these for an Easter get together and they were a hit! Kids and adults loved them! I followed recipe exactly except omitted the frosting…agree w/others that they are sweet enough without it.

Yummy:) Frosting is not needed, its sweet enough, did reduce the sugar.

These are really good and my girls at school loved them. But I did not use the white chocolate, didn’t have any on hand. But did use cinnamon chips and then just mixed together a cinnamon roll cream cheese type of drizzle for the top. They didn’t last long in the house even though I have to double the batch to make sure they all get at least 1.
