Description

This is a recipe that is great for summer; it is light and not too sweet. It is unique and one that is best made with fresh summertime cantaloupe.

Ingredients

  • 1 whole Cantaloupe
  • 3 ounces, weight Cream Cheese, Softened
  • ¼ cups Sugar
  • 2 envelopes (1 Oz. Envelope) Unflavored Gelatin
  • ½ cups Orange Juice
  • 1 whole 9 Inch Graham Cracker Crust, Chilled

Preparation

Slice your cantaloupe in half and use a spoon to clean out seeds. Peel and cut into chunks. Place chunks into a blender and process until smooth. Add cream cheese to cantaloupe and blend again until smooth.

Combine sugar, gelatin and orange juice in small saucepan and let stand for 2 minutes. Cook over low heat, stirring sugar and gelatin until dissolved. Slowly add to melon mixture, stirring well. Pour into chilled crust, chill until firm.

Garnish with whipped cream and cantaloupe slices. This could be put into dessert bowls and topped with whipped cream to make it gluten free.

Well, rhythm and rhymes are both good things. (grin)

In theory this could be made with any melon (honeydew, casaba, etc.), yes? It looks and sounds so freaking good, but I’m allergic to cantaloupe, dang it. I’ll give it a bash and let you know what happens.

Never before heard of cantaloupe pie. I will have to give this a try. Ha ha …that rythmed!

Made this today, added the entire block of cream cheese (8 ounces) and had a enough left over for three dessert glasses of cantaloupe mousse.

DELICIOUS! This would be perfect to bring to a cook out because no one else would be bringing it and it will get rave reviews!

Seriously you need to make this pie this week!

My usual pies contain the mandatory food group – chocolate. But, during the summer, we eat alot of cantaloupe and I was excited to see this recipe — something different! Made it last night and it was great! Easy to make and my son really liked it. Light, refreshing and a recipe I will continue to make.
