This is a recipe that is great for summer; it is light and not too sweet. It is unique and one that is best made with fresh summertime cantaloupe.
Slice your cantaloupe in half and use a spoon to clean out seeds. Peel and cut into chunks. Place chunks into a blender and process until smooth. Add cream cheese to cantaloupe and blend again until smooth.
Combine sugar, gelatin and orange juice in small saucepan and let stand for 2 minutes. Cook over low heat, stirring sugar and gelatin until dissolved. Slowly add to melon mixture, stirring well. Pour into chilled crust, chill until firm.
Garnish with whipped cream and cantaloupe slices. This could be put into dessert bowls and topped with whipped cream to make it gluten free.

My kids love cantaloupe! What a great idea, this pie sounds refreshing for a hot summer day!

In theory this could be made with any melon (honeydew, casaba, etc.), yes? It looks and sounds so freaking good, but I’m allergic to cantaloupe, dang it. I’ll give it a bash and let you know what happens.

Never before heard of cantaloupe pie. I will have to give this a try. Ha ha …that rythmed!
