These are little pieces of heaven. Layered butterscotch and cheesecake-like filling. Very rich, but also very hard to keep in our house.
Preheat oven to 325 degrees.
Grease 9×13 pan.
In a microwave safe bowl, combine butter and chips.
Microwave on high for 1 1/2-2 minutes, or until thoroughly melted.
Add graham cracker crumbs, mix well.
Set aside 2/3 cup.
Press the remaining mixture into the pan.
In a separate bowl, beat cream cheese until smooth.
Add milk, egg, and vanilla. Mix until creamy.
Pour over the “crust.”
Sprinkle reserved mixture over the top.
Bake for 30-35 minutes, or until golden and slightly bubbly on edges.
Allow to cool, then cut into small squares.
Refrigerate, then serve.
Keep leftovers (as if there could be such a thing) in fridge.
