This is the REAL and purest version of all Buckeye recipes. I use simplistic form and minimal ingredients for this recipe. Delicious each time!
NOTE: A Buckeye is the product of the state tree of Ohio. It is a poisonous nut that looks like a “buck’s eye”. It’s dark, with a little bald top. This is the candy version…
1. Scoop all of the peanut butter from the jar into a large mixing bowl.
2. Open your confectioner’s sugar, and pour half of the bag into the bowl.
3. With your hands… mix together the peanut butter and powdered sugar until it is very dough-like.
4. Keep adding more of the confectioner’s sugar until the peanut butter no longer sticks to your fingers or hands (but don’t make it so dry that it crumbles… you don’t want that).
5. Using your hands, roll the “peanut butter dough” into one inch balls and place on a wax-papered cookie sheet.
6. When you’ve made all the balls, put them in the refrigerator to chill (or they’ll be too soft to dip into chocolate).
7. Using the double-boiling method (to prevent burning the chocolate), melt the chocolate in a bowl that is placed over a small saucepan full of boiling water (or use a double boiler). Heat it until it’s nice and smooth and melted.
8. Carefully dip your peanut butter balls into the melted chocolate leaving the top part “bald”. Basically, don’t cover the entire ball with chocolate. And don’t leave it in the chocolate too long, or the ball will get soft and be harder to get out!
9. Place the buckeye back onto the wax paper to cool.
10. Once cool, serve and enjoy! DELICIOUS!!!
***When dipping: I use either a toothpick or two forks to lower the ball into the chocolate. It’s really your choice…whatever you’re most comfortable with, but they’re difficult to keep on a single toothpick. When done, if the toothpick hole is too big, just close it up with your fingers gently.
