Description

Back when microwaves were new, my mom took a cooking class, thinking she’d cook more than reheat in the appliance. That wasn’t quite the case, but this is the one recipe from that class that survived the test of time.

Despite being cooked in the microwave, this is hot, gooey, cake-y, and chocolate-y goodness ready in about 20 minutes.

This is what we make when we want something warm and comforting, and we want it pronto!

Ingredients

  • FOR THE PUDDING:
  • 1 cup Packed Brown Sugar
  • 2 cups Very Hot Water
  • ¼ cups Butter, Softened
  • ¼ cups Cocoa
  • _____
  • FOR THE BROWNIE MIX:
  • 1 cup All-purpose Flour
  • 1 cup White Sugar
  • ¼ cups Cocoa
  • 2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 1 cup Milk
  • 1 teaspoon Vanilla
  • ½ cups Chopped Walnuts Or Pecans

Preparation

Mix the pudding ingredients together in a 1-qt. microwave safe dish. Microwave on high for 4 minutes.

While cooking the pudding, in a separate 2-qt. dish, mix together the flour, sugar, and cocoa. Add baking powder and salt. Make sure the ingredients are well blended. Slowly stir in the milk and vanilla, stirring until all the dry ingredients are completely moist.

Pour the hot pudding over the brownie mix in the 2 qt. dish. Sprinkle with 1/2 cup chopped nuts. Microwave on high for 9 – 12 minutes, depending on the microwave. Serve warm and enjoy!
