These blondies are what my dreams are made of. Simple to make with a greater depth of flavor than your average blondie. The bourbon and brown butter add wonderful caramel notes. And of course, who doesn’t love Cadbury Mini Eggs.
Preheat oven to 350 F. Butter an 8×8-inch pan.
In a saucepan over medium-high heat, brown the butter. To brown the butter first melt it, whisking frequently. Then wait for it to foam and subside. Once you see brown specks form remove it from the heat and you are done. Pour it into a large mixing bowl and allow it to cool before proceeding.
Beat the cooled brown butter and brown sugar until smooth. Add the egg, egg yolk, vanilla, and bourbon and beat until combined. Stir in salt and flour.
Once combined, stir in the crushed Cadbury Eggs. Pour the batter into the prepared pan, smooth the top and bake for 20-25 minutes. So easy and so good!
