Description

A simple Blueberry Pie Ice Cream combination.

Ingredients

  • 2 cups Heavy Cream
  • ¾ cups Sugar
  • ⅛ teaspoons Salt
  • 1 whole Vanilla Bean
  • 1 cup Whole Milk
  • 1 teaspoon Vanilla Extract
  • 3 whole Graham Crackers, Pulverized (totally)
  • ¾ cups Blueberry Pie Filling (or Desired Pie Filling)

Preparation

In a saucepan, heat 1 cup of heavy cream, sugar, and salt. Cut the vanilla bean in half and scrape seeds into the mixture along with the vanilla bean pod. Stir until sugar is dissolved. Remove from heat and remove the bean pod.

Add the remaining 1 cup heavy cream, milk, vanilla extract, and crushed graham crackers.

Refrigerate mixture until thoroughly cooled.

Add chilled mixture to an ice cream maker and churn according to manufacturer’s directions.

Once churned, gently stir in pie filling and serve right away, or layer ice cream and pie filling in a container and freeze until desired hardness.

Makes a little over a quart. (4 1/2 cups to be exact.)

I LOVE this recipe as does my entire family. LOL, last weekend I went out and purchased a counter top ice cream maker just to try this recipe. Since last Saturday, I have made this recipe 4 times!!! thank you for sharing.

Yowza – this just may be the first ice cream I attempt to make with my new kitchenaid ice cream attachment. Just sounds divinely evil (oxymoron, anyone?)

We made this for the forth of July and really enjoyed it. The ice cream base is my new favorite vanilla. I would recommend letting it set fully, maybe make it a day ahead. Ours was partially hard and still good, but if you want it firmer make ahead. The other difference we made was I didn’t add the graham crackers to the base, we made a graham cracker crust with a little butter and sugar and sprinkled it on the pie filling. It was divine. Thanks!
