Healthy and refreshing, these are the perfect summertime treat!
You will also need popsicle sticks and a popsicle mold. With my size mold, this made 12 popsicles.
In a blender, puree the blueberries, mint leaves, agave nectar, lime juice and zest. Add the rum and sparkling water and blend thoroughly.
Pour the mixture into popsicle molds and add the popsicle sticks. Freeze for 4 hours or overnight.
To remove them from the molds, briefly run hot water over the bottom of the mold and slide the popsicles out. Wrap in plastic wrap and store in the freezer for up to 1 month.
