Description

The most delicious blueberry cobbler you’ll ever eat. Promise. Serves a lot of people, but you might not want to share.

Ingredients

  • 5 cups Blueberries
  • ¾ cups Granulated Sugar
  • 2 Tablespoons All-purpose Flour
  • ¼ teaspoons Salt
  • ½ Tablespoons Lemon Juice
  • ¼ cups Water
  • 1 Tablespoon Butter
  • ½ cups All-purpose Flour
  • ½ cups Sugar
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Salt
  • 2 Tablespoons Butter, Softened
  • 1 whole Egg

Preparation

1. Preheat the oven to 375 degrees.
2. In a 9×9 pan slightly greased pan (I used Pam), combine the berries, sugar, 2 tbsp. flour, salt, water, and lemon juice. Mix well. Dot with a tablespoon of butter.
3. Mix together the ingredients for the topping: flour, sugar, baking powder, salt, butter, and an egg. Smooth this topping out.
4. Drop topping over berries, distributing evenly over berries. You want more berries than topping, so don’t think you don’t have enough batter.
5. This mixture goes in the oven for 35 minutes, and is then best served warm with french vanilla ice cream. Enjoy!

This was excellent for the ton of blueberries we picked. I was looking for a recipe I had made before with lemon in it. It was very easy to make too. I only had 4 cups of blueberries, so I just scaled down a bit on the sugar.
