This recipe was handed down to me from my great grandma. It’s super easy to make and tastes great topped with ice cream on a hot, summer day. You can omit the blueberries and use the cake for shortcakes and top with your favorite berries.
Preheat oven to 350 degrees.
Grease 8X8 pan.
In a mixer: Mix Sugar and Shortening. Add Milk and Egg. Mix. Add Baking Powder and Flour. Mix.
By hand: Gently fold in the blueberries.
Pour into greased pan and bake for 30-35 minutes or until golden brown.
Top with whipped topping or ice-cream or eat it straight from the pan!

This was very easy to throw together. I had to bake it for 35 minutes in order for the middle to set and that caused my edges to brown more than I would’ve liked. Just keep your eye on it. I also thought the cake was too plain by itself. It needs to have the cool whip or ice cream with it (to satisfy my sweet tooth). I will make it again though!
