Description

Delicious and diet-friendly blueberry almond coffee cake made with whole wheat flour for only 165 calories per serving.

Ingredients

  • 2 cups Whole Wheat Flour
  • ¼ cups Splenda Sugar Baking Blend
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Baking Soda
  • ½ teaspoons Cinnamon
  • ¼ teaspoons Nutmeg
  • ½ teaspoons Salt
  • 1 whole Egg
  • 1 cup Lowfat Buttermilk
  • 1 cup Blueberries, Divided
  • ⅓ cups Chopped Almonds, Divided
  • 1 teaspoon Vanilla Extract

Preparation

Preheat your oven to 350ºF.

In a large mixing bowl, combine all of the dry ingredients. Mix together to remove any clumps.

In another bowl, whisk together the egg, buttermilk, and vanilla. Slowly stir the wet and dry ingredients together until mixed. Try not to overmix or the cake will become tough. Gently fold in half of the blueberries and almonds.

Pour everything into a round cake pan. Sprinkle the remaining blueberries and almonds on top. Bake for 30-35 minutes until a toothpick comes out clean. Enjoy!
