Perfectly light and refreshing!
Note: I use Organic Blood Orange Soda from Safeway.
For the cake: Combine flour, baking powder and salt in a medium bowl; set aside.
Beat butter and sugar in a mixing bowl with mixer until light and fluffy. Add vanilla. Beat in egg whites one at a time. Mix in food coloring.
Into the creamed mixture, beat in the flour mixture and the soda in three alternating additions, starting and ending with flour. Pour batter into two greased and floured 9-inch or 8-inch pans.
Bake at 350F for 35 (9-inch pan) or 45 (8-inch pan) minutes.
For the frosting:
Heat the soda in a saucepan over medium-high heat to a boil; cook until reduced to 1/4 cup. This will take about 15 minutes at a rapid boil and must be watched. Or you can cook it on medium-low boil for 25 minutes.
Cool completely.
Beat butter and cream cheese in a bowl with a mixer, 1 minute. Gradually add confectioners’ sugar, the reduced soda, vanilla and food coloring. Beat until smooth and creamy. Frost onto your completely cooled cake.

I made this cake for my boyfriend and sister last night, and they both really liked it. It’s a simple recipe. I’ve actually never used soda as an ingredient, but it turned out wonderfully!
