Description

Raisin Bran cereal contributes both flavor and fiber. This is an easy, throw-it-together banana bread. Got this recipe from a roommate many years ago!

Ingredients

  • 2 whole Eggs
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Lemon Juice
  • 2 cups Over-ripe Bananas, Mashed (about 4-5 Bananas)
  • 1-½ cup Raisin Bran Cereal
  • 2-½ cups All-purpose Flour
  • ¾ cups Sugar
  • 1 teaspoon Salt
  • 2-½ teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ⅓ cups Vegetable Oil (canola, Safflower, Or Walnut)
  • 1 cup Walnuts Or Pecans, Chopped

Preparation

Preheat oven to 350ºF.

Combine the eggs, vanilla, lemon juice, bananas and Raisin Bran in a large bowl and let sit for 10 minutes. In a separate bowl, mix the flour, sugar, salt, baking powder, and baking soda together. Stir the oil into the wet mix. Add dry mix to the wet mix and stir just until moistened. Stir in the nuts.

Pour into a greased 8″x5″ loaf pan and bake for approximately 45-50 minutes until done (when a toothpick inserted in the middle comes out clean). If the bread starts to get too dark on top and isn’t done yet, you can cover it lightly with a piece of foil or turn the oven down to 325ºF.

Cool on a rack. Serve with softened cream cheese.

Note: if you wish, you may also add 1 Tablespoon of flax seed or wheat germ.
