Description

These bars are buttery, oatmealy, dense, sort of sweet, and crumbly. They serve as a great breakfast treat for any baked oatmeal craving and are low-calorie and low-fat.

Ingredients

  • 1-½ cup White Whole Wheat Flour
  • 2 cups Rolled Oats
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 2 teaspoons Cinnamon
  • ½ cups Brown Sugar (unpacked)
  • 2 Tablespoons Butter
  • ¼ cups Granulated Sugar
  • 1 whole Egg White
  • 1 teaspoon Vanilla Extract
  • ½ cups Plain Greek Yogurt

Preparation

Preheat oven to 350 degrees F. Spray a brownie pan with cooking spray. Combine flour, oats, baking soda, salt, cinnamon, and brown sugar in a large bowl. In another bowl, whisk together butter, granulated sugar, egg white, vanilla extract, and Greek yogurt until smooth. Pour wet mixture into dry mixture and stir until batter is combined. Pour the oat mixture into the pan and bake for 20-25 minutes, or until the tops of the bars turn golden brown. Remove from the oven and let cool in the pan for 5 minutes. Let stand on a wire rack for 15 minutes before serving, or serve hot immediately.

Makes 12 bars.
