Description

These Apricot Bars make a delicious dessert OR snack OR breakfast. They’re about as wholesome as it gets: oats, brown sugar, butter, flour, and an interesting use of jarred Apricot Preserves. They just feel good goin’ down, no matter what time of day you choose to eat them.

Ingredients

  • 1-½ cup Flour
  • 1-½ cup Oats
  • 1 cup Packed Brown Sugar
  • 1 teaspoon Baking Powder
  • ½ teaspoons Salt
  • 1-¾ stick Salted Butter, Cut Into Pieces
  • 1 jar (10-12 Ounce) Apricot Preserves

Preparation

Mix together all ingredients except apricot preserves. Press one half of the mixture into a buttered 8” square (or small rectangular) pan.

Spread with a 10-12 ounce jar of apricot preserves. Sprinkle second half of mixture over the top and pat lightly.

Bake at 350 degrees for 30-40 minutes or until light brown. Let cool completely, then cut into squares.

These were great with homemade strawberry jam. I think I’ll try peanut butter next!

These are crumbly but SO GOOD. I made them for a small party I had and got several compliments. Also made with raspberry jam, my fav!!!

I’ve made these apricot bars a couple of times. Today I changed it up, I used peach jam and sprinkled a few fresh raspberries over the jam. Very good! I find the bars a bit crumbly, they don’t stay together perfectly. Maybe I’ll try softening or even melting the butter next time.

I am not a huge apricot fan, but after making these bars I am! They were gone within 1 day of making them. I will be making these again.

Kind of messy to serve but quite simple to make. It just doesn’t have… a certain zing. I’ve made it twice, but it isn’t going to stay in my keeper file.

These are delicious. I always have to warm up the butter and use my hands to mix everything, otherwise it is too dry/crumbly. Strawberry preserves are yummy in these too.
