Description

A delicious apple crisp for two!

Ingredients

  • 3 Tablespoons Cold Unsalted Butter, Diced
  • 4 Tablespoons Sugar, Divided
  • 2 Tablespoons Flour
  • ½ teaspoons Cinnamon, Divided Use
  • 2 Tablespoons Rolled Oats
  • Pinch Of Salt
  • 2 whole Medium Tart Green Apples (such As Granny Smith)
  • 1 whole Medium Red Sweet Apple (such As Honey Crisp)
  • ¼ teaspoons (heaping) Freshly Grated Nutmeg
  • 2 Tablespoons Grade A Maple Syrup
  • ¼ teaspoons Lemon Zest
  • ½ teaspoons Lemon Juice

Preparation

Preheat the oven to 375° and have ready a small gratin dish with a 3-cup capacity.

In a small bowl, add the diced butter, 2 tablespoons of the sugar, flour, 1/4 teaspoon of the cinnamon, oats, and the salt. Rub the butter into the ingredients until a crumbly mixture forms. Set aside.

Peel, core and dice each apple into 1″ chunks. Add the apple chunks to a large bowl and toss with the remaining 2 tablespoons of sugar, the remaining 1/4 teaspoon of cinnamon, and the remaining ingredients. Pour the apples into the gratin dish and sprinkle the streusel on top. Bake for 40-45 minutes. For extra crispiness and browning, broil for the last 5 minutes of cooking.

With 3 old apples in the fridge and a need for a quick dessert, this recipe was a godsend. I ended up doing a few things differently, mainly the omission of the lemon (didn’t have any) and using sugarfree syrup. I also sliced my apples (more like a crust-less pie), which required a slightly larger dish. Overall, I thought the recipe was great and the perfect amount for just two. Thank you!

This is an easy, quick recipe that I found quite delightful for a simple Tuesday dessert! I didn’t have any fresh nutmeg, so I substituted fresh ginger and it turned out great. My only thought would be to cut the baking time by about 10-15 minutes and just broil it all at about the 20-25 minute mark (I started broiling at 39 minutes).The reason I say this is that the apples came out quite a bit more overcooked than I had hoped. But all in all it’s a great little recipe, and I’ll be sure to use it again!
