This Apple Cinnamon Pound Cake not only tastes amazing, but makes your kitchen smell so good you will be salivating by the time it comes out. But then, I decided I had to be sinful and make the cake even more delicious. I smothered it with big, loopy swirls of my favorite, most mesmerizingly sweet icing: cream cheese. With a taste somewhere between cinnamon rolls and apple pie, you will fall in love with this no-fuss cake.
Preheat oven to 325 degrees for a bundt cake, or 300 degrees for a loaf.
To make the cake, in a mixer, cream together the cream cheese and margarine. Add 3 cups of sugar, then eggs, then flour. Add the vanilla and beat until creamy with no lumps.
Skin and chop apples into bite-sized chunks. Toss apples in a bowl with the cinnamon and remaining 1/4 cup sugar. Fold the coated apples into the pound cake batter, but do not stir more than about 5 times.
Pour in 2 greased and lined loaf pans, or a greased and floured bundt pan. Bake for about 45 minutes for a loaf pan, or 75 minutes for a bundt pan (to check: stick a toothpick in and if it comes out clean, it’s done).
While cake is baking, prepare the cream cheese frosting. Cream together cream cheese and margarine. Slowly mix in powdered sugar until creamy. Dash in 1 teaspoon of vanilla and ice the cooled cake, or melt the icing for 10 seconds and drizzle over the cake.
