Description

An alternative to traditional apple cake.

Ingredients

  • 1 stick Unsalted Butter
  • ¾ cups Plus 2 Tablespoons Sugar, Divided Use
  • 2 whole Eggs
  • 2 Tablespoons Heavy Cream
  • ½ cups Greek Yogurt
  • 1 cup All-purpose Flour
  • ½ teaspoons Salt
  • 1-½ teaspoon Baking Powder
  • 1 cup Pitted Black Cherries In Syrup
  • 1 Tablespoon Cinnamon
  • ½ whole Lemon Juice
  • 1 whole Granny Smith Apple
  • 1 Tablespoon Butter (for The Baking Pan)
  • 2 Tablespoons Powdered Sugar

Preparation

Preheat oven to 180 C.

In the bowl of your electric mixer cream the butter and 3/4 cup of sugar. Then stir in eggs one at a time, mixing well after each addition.

Combine the heavy cream and Greek yogurt in a small bowl then pour it into the butter mixture and mix well.

In a separate bowl combine flour, salt and baking powder and slowly add the mixture into the batter mixing well until you get a nice smooth texture. Add about 1 cup of black cherries into the batter. Stir gently.

In a separate bowl combine the remaining 2 tablespoons of sugar, cinnamon and lemon juice. Peel, core and slice up the apple very thin, add it into the bowl with the juice mixture and stir to coat the slices in the juice mixture.

Heavily butter a baking dish (8 inches)and pour in the batter. Spread it evenly to cover the entire dish. Arrange the apple slices on top of the batter in overlapping rows, pressing slightly into the batter.

Bake at 180 C for about 45 minutes. Remove from the oven, set the dish on a rack and let the cake cool down completely. Sprinkle the surface with powdered sugar and serve.
