Description

Not quite cake, not quite a blondie, but all kinds of delicious, these airy bars will hit the spot.

Ingredients

  • ½ cups Butter, Softened
  • ½ cups Brown Sugar
  • 1 whole Egg
  • 1 teaspoon Vanilla
  • 1-½ cup Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoons Salt
  • 1 cup Diced Apples
  • ½ cups Butterscotch Chips

Preparation

Preheat oven to 350 F.

In a large bowl using an electric mixer, beat together the butter and sugar until creamed. Then mix in the egg and vanilla. Mix well.

In a separate bowl mix together flour, baking powder and salt. Add dry ingredients into the butter and sugar mixture. Mix well. Add apples and butterscotch chips and mix to combine. Mixture will be thick.

Pat the dough into a greased 8×8-inch pan. Bake for 17-20 minutes or until lightly golden on top.

Store leftovers in the refrigerator.

Very tasty. A bit sweet for our tastes so I will cut back on the sugar a little next time. I used cinnamon chips as that’s what I had on hand, and they paired nicely with the apple. I needed more like 30 minutes baking time.
