Not quite cake, not quite a blondie, but all kinds of delicious, these airy bars will hit the spot.
Preheat oven to 350 F.
In a large bowl using an electric mixer, beat together the butter and sugar until creamed. Then mix in the egg and vanilla. Mix well.
In a separate bowl mix together flour, baking powder and salt. Add dry ingredients into the butter and sugar mixture. Mix well. Add apples and butterscotch chips and mix to combine. Mixture will be thick.
Pat the dough into a greased 8×8-inch pan. Bake for 17-20 minutes or until lightly golden on top.
Store leftovers in the refrigerator.
