A Pennsylvania Dutch recipe passed down to me from my Great-Grandmother, A.P. Cake is a somewhat dense creation that is often dipped in hot coffee. Eat this rustic cake for breakfast, snacks and even dessert!
**Note: For those who wish a truly dense cake, increase the shortening by 1/8 cup and only add water until the dough is between cookie and muffin-type density.
Preheat oven to 350º Fahrenheit.
In mixing bowl, combine flour, sugars, baking powder and salt. Mix until ingredients are evenly distributed.
Add shortening and cut in until mixture is crumbly. Stir in water gradually until dough is thinner than cookie dough, but thicker than cake batter — about like muffin batter or just a bit thicker. (This may use more or less water depending on altitude, weather, etc., of course.)
Spread mixture into greased 9-inch round cake pan. Sprinkle top with cinnamon sugar.
Bake at 350º for 20-25 minutes or until pick inserted in center comes out clean.
