Description

An easy and healthy snack!

Ingredients

  • 4 cups Rolled Oats
  • 2 Tablespoons Chia Seeds
  • ½ cups Unsalted Peanuts, Chopped
  • ½ cups Brown Rice Syrup (or Honey)
  • ¾ cups Natural Peanut Butter, Melted

Preparation

Preheat oven to 350F.

In a large bowl, combine oats, chia seeds and peanuts. Add brown rice syrup (or honey) and mix to combine. Add melted peanut butter and mix until moistened. This works as a perfect, simple granola bar, but you can also throw in any add-ins (chocolate chips, coconut, wheat germ, dried fruit, flaxseed, coconut, additional nuts) at this time. Fold them into the dough. You may need to get in there with your hands and work the granola dough!

Press dough in a greased (nonstick spray) 9 x 13 baking dish. Bake for 25 minutes.

These would also work as a great no-bake granola bar, but I liked how they came together and the chocolate chips melted as they got warm. If you want to make no-bakes, simply press the dough into the pan and refrigerate for 60 minutes.

Hi Marci! Chia seeds are high in omega 3’s and can be used a variety of ways – your best bet is to find them at a health store. If you can’t find any, try subbing another seed or nut!

Yeah! Also Gluten free (with GF oats!) What are chia seeds, and do you have any suggestions as to what I can use to substitute if I can’t find them in my local (rural) store?

Thanks for a GREAT recipe!

Easy, and delicious. I added a scoop of protein powder and added a mashed banana. I will definitely be making these again!

Delicious! I used what I had on-hand: flax seeds instead of chia and almonds instead of peanuts. I’m looking forward to trying more variations.

Fabulous! I like the no bake version best. I have even added a mashed banana to the mix to make peanut butter banana chocolate chip bars. Yummy! Makes the mixture a little bit easier to press together. I love the chia seed crunch!
