Ingredients

  • FOR THE FILLING:
  • 1 whole Pie Crust (store Bought Or Home Made)
  • 3 Tablespoons Plain Flour
  • ½ cups Sugar
  • 2 cups Fresh Or Frozen Blueberries
  • 2 Tablespoons Lemon Juice
  • ½ teaspoons Lemon Zest
  • 3 Tablespoons Soft Butter
  • FOR THE TOPPING:
  • ¾ cups Plain Flour
  • ½ cups Sugar
  • ⅓ cups Soft Butter

Preparation

Arrange the pie crust in a deep dish pie plate.

For the blueberry filling:
In a medium sized bowl, add the 3 Tablespoons of plain flour and 1/2 cup sugar. Mix well, then add the blueberries and toss to coat them with the sugar mixture. Sprinkle the lemon juice and lemon zest over blueberries and sugar mixture and toss again. Pour blueberry mixture into the pie crust. Dot bluberries with the 3 Tablespoons butter.

For the crumb topping:
In a medium sized bowl, add the 3/4 cups plain flour and 1/2 cup sugar. Mix well. Add the 1/3 cup soft butter using a knife and fork to gently cut the butter into the flour/sugar mixture.

Top the bluberries with the crumb topping and place pie in preheated, 400 degree F oven. Cook 45-55 minutes until pie is bubbly and topping is golden brown. Serve warm with vanilla ice cream.
