A simple, yet delicious tomato basil sauce.
Wash your tomatoes and use a knife to cut a cross in the bottom of each. Set them aside for a moment.
Fill a large bowl with ice and add some water. Set aside.
Bring a pan of water to the boil. Then lower the tomatoes into the boiling water and boil for ten seconds. Then remove them from the pan using a slotted spoon and immediately plunge them into the bowl of ice-cold water.
When the tomatoes have cooled, peel them and discard the skins. Continue to chop the tomato flesh to a pulp.
Put your tomatoes in a saucepan and simmer for ten minutes. Then season it with salt and pepper, drizzle in a bit of olive oil and add your chopped basil. Stir to combine and you are done. Serve over your favorite pasta.
