Spicy Indian style chutney with a classic combination of tomatoes and fresh coriander/cilantro.
Heat the oil and add tomatoes and green chilies. Let them fry on medium-high heat without turning too much for 5-7 minutes. Let cool.
Add the tomatoes and chilies into a food processor along with garlic, coriander and salt. Pulse it a few times but do not make it too smooth. It should have some texture. Enjoy with a whole lot of stuff (rice, etc).
Note- you can substitute green chilies with serrano peppers. You can also cut down on the chilies to make it into a delightful dip.
