If you have only tried warm butter sauce or cocktail sauce with your seafood, you’ve gotta try this special sauce. It’s different . . . but savory and rich in flavor.
* Add garlic, chilies (without stems), ginger, and cilantro into a food processor. Pulse about 5 times until it’s coarsely chopped.
* Add sugar and pulse 5 times until all mixed together.
* Add fish sauce and lime juice, and pulse 3 times more. At this point the sugar should be dissolved into the mixture.
* Taste and adjust seasonings to your preference.
