Strawberry sauce – great drizzled over chocolate Belgian waffles for New Year’s Day breakfast.
In a 2 quart saucepan, bring 1 cup of water and 1 cup of sugar to a boil, then add 2 pints of strawberries, that have been rinsed and roughly chopped. Let this cook for about 20 minutes then remove from the heat. Use an immersion blender, a food processor or regular blender and process the sauce until smooth. While the sauce is still warm, add 2 tablespoons of butter and 1 teaspoon of vanilla extract. Stir and enjoy.
