This versatile pesto spread packs in both nutrients and healthy fats, thanks to the spinach leaves and walnuts (and walnut oil). Thinned out, it generously coats 1 pound of pasta.
1. In the bowl of a food processor, add spinach leaves, walnut oil, garlic and walnuts. Blend for about 30 seconds.
2. Optional: To thin out the sauce to adequately coat 1 pound of pasta, add 1/2 cup hot water to the food processor and pulse to combine.
Notes:
1. I like garlic in my pesto, so I used 3 cloves. Feel free to adjust quantity downward to match your taste preferences.
2. If using sauce as a sandwich spread or in another way in which a thick sauce is desired, skip step #2 above. If using as a pasta sauce, proceed with step #2. For convenience, you can use 1/2 cup of the boiling pasta water for this step.
