Description

In this Spinach Pesto,the distinct earthy flavors of spinach combine with the pungent nature of the grana padano cheese, the sweetness of the pine nuts, and the unmistakable garlic essence. Absolutely delicious.

Ingredients

  • 2 cups Spinach, Stemmed And Washed
  • 1 Tablespoon Pine Nuts
  • ½ cups Grated Grana Padano
  • 1 clove Garlic, Heart Removed
  • 1 pinch Salt
  • 1 dash Pepper
  • 4 Tablespoons Cold Pressed Extra Virgin Olive Oil

Preparation

Blend the spinach, pine nuts, grana padano cheese, garlic, salt, pepper, and 2 tablespoons olive oil in a food processor until nearly smooth, scraping the sides of the bowl with a spatula as necessary. Drizzle the remaining olive oil into the mixture while processing until smooth.

Taste and adjust seasonings, if needed.
