An easy marinade for chicken, great for kebabs on the BBQ or filling pita breads, sandwiches, etc.
Heat a frying pan on medium high. Add the cumin seeds and toast for 1 minute (approximately) then grind using a mortar and pestle. (You could use 1 teaspoon of ground cumin instead.)
Mix all of the ingredients together and combine with the chicken in a bowl. Mix until the chicken is well coated. Refrigerate for at least an hour (the longer the better).
Preheat the oven to 200ºC (about 400ºF). Spread the chicken evenly on a baking tray and cook for 10-15 minutes. Alternatively, skewer and cook on a BBQ.
