This is a tomato-based condiment often used in Cuban cooking. I add it to many of my meat and chicken dishes.
1) Cook garlic, onion, and green pepper in olive oil until the onions are translucent.
2) Add the tomato sauce, ground oregano, salt and vinegar and cook on medium-low heat for about 5 minutes. Taste and adjust salt.
3) This can be stored in a tightly sealed container in the refrigerator.
