Perfect on fish, especially fish that traditionally enjoys being smoked, and trout is perfect.
Cube smoked gouda and chop chives; set aside.
In a small sauce pan, add cream and butter, allowing to warm up and the butter to melt. Add in cubed gouda cheese and chives.
Melt cheese and stir into cream until completely combined. When fully incorporated, whisk together or use hand blender to ensure smooth and creamy consistency.
At the end, add a dash of lemon zest if you’d like. It’s completely optional, but it adds a nice lighter flavor to the sauce. It’s wonderful with or without the lemon.
I enjoyed it with the lemon. Pour over a piece of fried trout, salmon or any other fish that goes good with a smoky flavor!
