Simply wonderful strawberry butter!
This is a recipe from Miss Sophie, used with her permission.
Begin with one stick of softened butter. Put it into a bowl and whip it using a mixer (hand mixer works just great) until light and fluffy. Add strawberries and mix. Add confectioners’ sugar and mix. Add the second stick of softened but cool butter (cut this stick into chunks before adding). This gives the butter a beautiful whipped consistency. Whip again until fluffy.
Store in refrigerator up to a week. Bring the butter to room temperature before serving. Serve on warm bread, biscuits, or even pancakes!
