I needed a sauce to spice up my fish tacos one night, and I almost bought a pre-made bottle of chipotle mayo from the store. Then I realized that I had all the ingredients I needed at home. I can guarantee my version is 100 times more flavorful and delicious, with virtually no effort!
If preparing by hand, carefully mince chipotle peppers. Whisk all ingredients together in a small bowl.
If using a food processor, throw it all in and blend!
Let rest for 5–10 minutes, if you have time, to help the flavors combine.
I pour this generously over fish tacos!
Also, I keep chipotle peppers in the freezer for weeks at a time and just use individual peppers and sauce as needed. I’m a single girl and it takes me a while to use up one of the cans, but they hold up amazingly in the freezer!
