A refreshing switch up of your classic pesto! I may even like this way better!
Bring a pot of water to a boil to cook your pasta if using pesto right away. Cook until al dente, drain and set aside.
In your food processor, add in parsley, peanuts, garlic, half of the amount of olive oil and pulse to combined. Scrape down the sides and add in the rest of your oil and lemon juice. Pulse a few more times until well combined.
Add to your cooked spaghetti and toss to coat. Enjoy!
