Oven roasted garlic is an easy way to add layers of flavor to sauces, dressings and soups.

Preheat oven to 400ºF.
Remove all but one layer of the loose papery skin from the outside of the garlic bulb, leaving the bulb intact. Cut off the top of the bulb, which will leave the top portions of the cloves exposed.
Place the garlic bulb, cut side up, on a doubled square of foil. Drizzle the olive oil over top of the bulb, then rub to coat the entire bulb with the oil.
Pull up the sides of the foil to form a loose package around the garlic and crimp the edges to seal. Place the foil package in a small baking dish or on a baking sheet.
Roast the garlic for 40 to 45 minutes. To test, carefully unwrap the foil and insert a small, sharp knife into one of the cloves. If the garlic clove is soft and tender, it’s ready. If not, close the foil and roast for an additional 5 to 10 minutes.
