A marinara sauce full of veggies and fibers!
In a large saucepan, combine all ingredients and turn the heat to medium-low. Stir occasionally. Add a little more water if needed. Cook for about 45 minutes to 1 hour, or until all ingredients are very soft. Transfer to a food processor and process for about a minute or two. Transfer back info saucepan and cook until heated through. Season generously with salt and black pepper. If sauce is too thick, add some additional water. Server over cooked pasta.
