Description

Make your own Light Italian Dressing with what you probably already have in your pantry and save on calories, a trip to the store, and extra plastic bottles laying around!

Ingredients

  • 1 whole Medium Tomato, Halved
  • ¼ cups Water
  • 1 Tablespoon Red Wine Vinegar
  • 1 Tablespoon Fresh Lemon Juice
  • 2 teaspoons Dijon Mustard
  • 1 pinch Sugar
  • 2 Tablespoons Extra Virgin Olive Oil
  • ½ cloves (Small) Garlic, Minced
  • ⅛ teaspoons Dried Oregano
  • ⅛ teaspoons Dried Basil
  • ¼ teaspoons Salt
  • Freshly Ground Pepper, to taste

Preparation

Rub the cut sides of the tomato along the coarse holes of a grater into a bowl; discard skins.

Whisk in remaining ingredients and pepper to taste.

Store in an airtight container for up to 1 week. Shake well before using.

Yields 1 cup.
