My wife, Jo, loves fish tacos and every place she has them, they are served accompanied by a creamy cilantro sauce. Our favourite taco joint in Mission Viejo, California also serves this type sauce with their pork and shrimp tacos, so she developed this sauce recipe to duplicate that taste and so she could enjoy this flavour at home in Utah. She succeeded!
1. Combine all ingredients in the container of a blender or food processor and process until a very smooth consistency is achieved.
2. Serve immediately as an accompaniment for shrimp, fish, or pork tacos or place in a sterile, capped container in the refrigerator until ready to use (can be kept for several days if refrigerated).

Which taco joint in MV? I live just north of there! Made a similar sauce to this a couple days ago with some shrimp & a mexican-inspired salad, but next time will try your recipe. Thanks!
