I make this scratch marinade about once a week. It reminds us of when we lived the island life. Hope you like it.
I marinate everything in this sauce: chicken, pork, beef, although our family favorite is “Hawaiian” cut short ribs for the BBQ.
This works well on skirt steak, too!
• In a heat safe mixing bowl, warm up the soy sauce in the microwave for about 15-30 seconds (this is just so the brown sugar melts, although, please don’t put the meat in hot marinade).
• Add the brown sugar and whisk until almost all of the sugar is dissolved.
• Add the garlic and the ginger.
• Add the juice almost last to help cool down the mixture if needed.
• Add pineapple (if desired)
Let the mixture cool if necessary.
Add mixture to chicken, beef or pork. Marinate from 3 hours to overnight depending on the cut of meat.
For a sweeter flavor or for tougher cuts of meat, finely chop some fresh or canned pineapple and add it to the marinade. You can also add lemon slices or orange slices to the marinade. I like lemon with chicken and orange with pork, but they are all interchangeable.
I like to marinate in a plastic zip top bag, so I can move the meat around easily throughout the marinade and fruit slices. Please note that if you use fresh fruit, do not marinate the chicken overnight or the meat will become mealy.
Multiply the recipe as necessary and you can tweak it to taste. These measurements will marinate 2-3 pounds of meat. Don’t forget to reserve some sauce aside for basting on the BBQ before you marinate the meat.
