Roasting garlic is so easy, and it adds a great flavor to so many dishes. If you don’t use it all at once, it’s easy to freeze for later use!

Heat oven to 400ºF.
Cut the bottom (about 1/4 inch) of each garlic head. Line a baking sheet with foil.
Take two additional sheets of foil. Add the garlic heads (cut side down) and 1 to 2 tablespoons of olive oil to the foil. Wrap up the foil tightly and place on the baking sheet.
Place baking sheet along with garlic in the oven and roast for 40–42 minutes. Remove from the oven and open the foil carefully. Allow the garlic to cool for at least 25 minutes before handling.
Squeeze the garlic from the peel.
To freeze: Line a baking sheet with parchment paper and place roasted garlic cloves on the parchment paper. Be sure the garlic pieces are not touching each other. Freeze for 30 minutes. Once frozen, place in a zippered plastic bag and label the bag along with the date. When you’re ready to use it, take out the pieces you need and let them sit on the counter for 5–10 minutes. They defrost in no time!
