This is a very hot, very good salsa. Similar to Mrs. Renfro’s Hot Green Salsa. I eat it on everything!
Put all ingredients in a stock pot and cook till boiling. Use an immersion blender and puree. Cook down to a nice thick consistency, then can.
How I like to can is to put all the jars in the dishwasher on high temperature wash before I begin the dicing. When I put the pot of sauce on the stove, I also put on a pot of water to boil for the lids and tops. By the time the sauce is ready, so are the jars and lids. Then I fill the jars, wipe the rims, place seals and lids on and wrap in a bath towl on the counter overnight to cool slowly. Any jars that didn’t seal are placed in the fridge.
Makes about 8 pints.
