A perfectly sweet guava-glaze with a spikey punch of tequila. Sure to get you rave reviews.
Add the guava jelly and garlic in a small sauce pan over medium heat and cook until jelly has dissolved. If the jelly has trouble dissolving add a small amount of water just to help it along. Remove from heat and add tequila and lime juice.
Season fajitas with salt and pepper and brush with glaze.
Heat your grill or cast iron skillet to medium high heat (you want your pan pretty hot but if the pan begins to smoke, turn your heat down just a bit). Brush grill with oil and lay your skirt steak on grill or skillet, allow meat to caramelize. Cook for 5 minutes on each side all while basting with glaze. Enjoy!
Makes 2 cups of glaze.
