I had wanted to create a ketchup from green tomatoes for years and finally motivated by this month’s theme of vegetables I did. I wish that it actually looked green. It does not due to the red pepper in the recipe and I am tempted to try it with a green pepper instead next time. However, I was so pleased with the flavor I probably won’t!
Chop the tomatoes and pepper into small pieces and put them into a bowl. Mix in the remaining ingredients. Cover and refrigerate overnight.
Put it into a saucepan. Bring to a boil and then simmer for 45 minutes. Remove pan from heat. Cool until it’s easy enough to handle then pour it into a blender and process until entirely smooth.
Makes 3 cups.
