Young garlic shoots perfume this mild pesto. Perfect on vegetables or pasta, in sandwiches, or topping a bowl of soup. It’s great for just about anything, really.
In a food processor combine the garlic scapes, pistachios, pine nuts, Parmesan cheese, lemon juice, salt and pepper. Pulse about 20 times until it’s very finely chopped. While the motor is running, slowly pour the olive oil in through the feed tube doing so a little at a time until it’s fully incorporated. Adjust seasonings to taste.
Note: If you are afraid that the garlic bite might be a bit too much, cut the amount of garlic scapes by half and use fresh herbs such as basil or dill for the other half.
