I was excited to see garlic scapes in my CSA box, but I had no idea what to do with them. Some online research lead me to pesto, and this is, in my opinion, one of the best pestos I have made.
Put everything except the olive oil in a food processor. Blend until it has formed a paste. Taste the paste for seasoning and adjust if needed. Turn the food processor back on and add the olive oil. Check the consistency, and add a little more oil if you like it looser.
Toss with hot pasta, or try it smeared on a bit of bread. Enjoy!
